Trata on Ice Anchovies with Mushrooms, Fennel, and White Wine
    Ingredients
  • 1 package of Trata on Ice anchovies 400 gr
  • 400 gr. mushrooms
  • • 1 medium-sized onion, finely chopped
  • 50 ml olive oil
  • 30 gr butter
  • 50 ml white wine
  • A few fennel leaves
  • Salt
  • Pepper
PREPARATION
Preparation Time:20 minutes

Allow the anchovies to reach room temperature. Use a paper towel to clean the mushrooms without washing them. Cut them into large pieces. Put the olive oil, butter, and onion in a deep frying pan, add salt, cover with a lid and cook at a low heat until the onion becomes transparent and sweet. That should take about 10 minutes. Turn the heat higher and add the mushrooms. Leave them in the frying pan without turning them over until they take on a pleasant color. Mix them, add the anchovy fillets, pour in the wine, cover, and cook for 8 minutes, until the anchovies are ready. Add the fennel and serve immediately with freshly ground pepper.
