Fricassee with TRATA Smoked Tuna, by Eleni Psyhouli
    Ingredients
  • 2 cans of TRATA smoked tuna, drained
  • 1 kilo of wild greens
  • 5 fresh green onions, finely chopped
  • 1 onion, finely chopped
  • 1 clove of garlic
  • 1 tablespoon of tomato paste
  • 1 tablespoon of flour
  • 1 cup of olive oil
  • Juice from 1 lemon
  • 1 bunch of fresh herbs
  • Salt and pepper
PREPARATION
Preparation Time:20 minutes

In a deep pan, warm the olive oil and sauté the onion, the green onions, and the tomato sauce until the onions wilt. Throw in the greens and the garlic, lower the head, add salt, sprinkle with the flour, and stir well. Cover the pan until the greens soften. Throw in the tuna, the fresh herbs, and the lemon juice, mix and serve with freshly ground pepper. Tips: *The secret to make this delicious is to cook the greens at a low heat, so that you will not need to add any water. ** All sorts of greens are suitable for this dish, even some wild ones and chard.
