Orzo with TRATA Smoked Tuna, by Eleni Psyhouli
    Ingredients
  • 2 cans of TRATA smoked tuna
  • 300 gr of large orzo
  • 4 tablespoons of olive oil
  • 1 finely chopped onion
  • 2 cloves of garlic, finely chopped
  • 1 glass of white wine
  • 1 package of chopped tomatoes
  • 8 cherry tomatoes cut in wheels
  • 1 teaspoon of sugar
  • Zest of 1 lemon
  • Salt
  • Pepper
PREPARATION
Preparation Time:30 minutes

Drain the Trata smoked tuna of excess oil lightly. In a large non-stick skillet, heat up the olive oil and sautee the onion until it wilts. Add the orzo and garlic, turn over twice, and add salt. Pour in the wine and let it evaporate. Add the chopped tomatoes and sugar. Lower the heat to mid-level. Gradually add hot water until the orzo softens. Halfway through the process, add the cherry tomatoes. Add the Trata smoked tuna, the lemon zest, the parsley, mix lightly, and serve with freshly ground pepper.
