Orzo with Musky Octopus TRATA
    Ingredients
  • 1 can of TRATA musky octopus piquant
  • 300 gr of orzo pasta
  • 200 gr of grilled sweet red peppers (Florina variety)
  • 1 clove of garlic
  • 1 onion, finely chopped
  • 30 ml of olive oil
  • 30 ml of white wine
  • 400 ml of hot vegetable broth
  • Salt and pepper
  • Garnishes:
  • 100 gr of finely chopped fresh herbs
PREPARATION
Preparation Time:30 minutes

Put the peppers and the garlic into the blender until they form a paste. Pour the olive oil into a pan and warm it. When the oil is hot, add the onion and salt, and leave on a medium setting until the onion has become translucent and sweet. Add the orzo pasta and let it become golden brown. Pour in the wine and add the red pepper paste. When the orzo seems ready to become dry, add the vegetable broth little by little. When the broth has all been added, the orzo will be ready. It should be very soft, not “al dente”. Serve in portions, together with the musky octopus and the herbs.
