Potato Salad with TRATA Musky Octopus
    Ingredients
  • 2 cans of TRATA musky octopus
  • 5-6 potatoes
  • 15-20 cherry tomatoes cut in half
  • 2 fresh green onions, finely chopped, with their leaves
  • 1 medium-sized onion cut in wheels
  • 2 tablespoons of finely chopped parsley (leaves only)
  • Juice from half a lemon
  • 1 tablespoon of vinegar (preferably white wine vinegar)
  • 1/4 cup of tea of olive oil
  • Salt and freshly ground black pepper
PREPARATION
Preparation Time:40 minutes

Wash the potatoes and boil them until they soften (about 30 minutes). Then put them in a bowl of very cold water for a minute and right after, pull their peels off so they come off easily. Then cut them into small pieces and put them in a salad bowl. Add the onion, the fresh green onions with their leaves, the cherry tomatoes, the parsley, and both cans of TRATA musky octopus. In a bowl, mix the olive oil, lemon juice, and vinegar together and pour the mixture onto the salad, while also adding salt and pepper. Put the salad in the refrigerator to cool and serve it immediately afterwards.
