Steamed sardines with tarama
    Ingredients
  • 1 pack (400g) fresh frozen Aegean sardine fillets TRATA on ice
  • 150g hot seafood stock
  • 100g lemon juice
  • 60g olive oil
  • Salt and pepper
  • For serving:
  • 200g fresh salad, washed and dried
  • 30g lemon juice
  • 60g olive oil
  • Salt and pepper
  • 200g white tarama
PREPARATION
Preparation Time:15’

Let the sardines come to room temperature. Pour the stock, olive oil and lemon juice into a large frying pan, add salt and pepper and bring to a boil. Place all the fillets in the pan and let them cook over medium heat for approximately 7 minutes until a little liquid is left on the bottom of the pan. Thinly slice the salad, place it in a bowl, add olive oil, lemon huice, salt and pepper and toss. Serve the salad in four plates adding a little of the tarama spread and the sardine fillets.
