Whole grain pasta, baked eggplants, fresh tomato sauce and tuna TRATA
    Ingredients
  • 1 can of Tuna in water TRATA
  • 400 gr. whole grain pasta
  • 200 gr. thin sliced eggplants
  • 2 tbsp olive oil
  • 250 gr. diced tomatoes
  • 1 clove of garlic
  • 100 gr. diced onion
  • 10 gr. dry oregano
  • 100 gr. finely chopped parsley
  • 100 gr. finely chopped basil
  • 1 small finely chopped red pepper
  • 1 tsp sugar
  • Salt
  • Pepper
PREPARATION
Preparation Time:35 minutes

Preheat the oven at 200°C. In a baking pan place the eggplants, olive oil and some salt. Mix and bake for 20 minutes until crispy. Boil and drain the pasta. Add 1 tbsp of olive oil and mix. In the meantime, prepare the sauce. In a large bowl mix the tomato, garlic, onion, oregano, parsley, basil, pepper, olive oil, sugar, salt and pepper. Put the mixture in the fridge until needed. Add the tomato sauce, eggplants and tuna in the pasta and slightly mix. Serve immediately.
